Peach Toddy

Happy National Hot Toddy Day, everyone! Ever wonder where the name “Toddy” came from, or the drink itself for that matter? We’ve done a bit of research (and drinking!) and discovered a few possible origins of this godfather of all hot drinks.

Who or what is Toddy? We found three popular theories, each very convincing.

Let’s start with ancient India and the tārī, or “toddy”, a medicinal beverage made with the sap of palm trees. That sounds likely enough, but 18th century Scotland has it’s own version of the story. The Scottish will tell you that Edinburg pubs fought off the bitter cold of Scotland by adding hot water drawn from Tod’s Well, the largest in the area at the time, to Scotch whisky. Perhaps, but what about Ireland’s claim that Dr. Robert Bently Todd invented a cure-all mixture that he prescribed to his patients? Dr. Todd’s variation included brandy, canella (white cinnamon), sugar, and hot water. (Surprised to hear that it didn’t include Irish whiskey? So were we!)

So, which one is correct? Being connected by British trade routes, we’re willing to bet these cultures probably influenced each other to create their own twists on this hot beverage, but we may never know which came first. One thing is certain, they all had the right idea to combine liquor (usually whiskey or brandy) with hot water and sometimes sugar or spices to create a medicinal beverage to warm us in winter and help ease the symptoms of the common cold.

Before we dive into recipes, let’s quickly review the health benefits of the Hot Toddy. If you were to order a Toddy at a pub today, the bartender would likely serve you a combination of whiskey, tea, honey, and lemon (or a similar variation).

Whiskey has all sorts of surprising health benefits! It aids in weight loss, slows dementia, improves heart health, prevents diabetes, increases good cholesterol, fights cancer, and even strengthens the immune system! But remember, too much whiskey can create more problems than it helps. Everything in moderation, friends!

Honey naturally coats to soothe a sore throat, and local raw honey is known to reduce environmental allergies in those who consume it regularly. Lemon is an excellent source of vitamin C, promotes hydration, aids in digestion, and even contains antioxidants that reduce weight gain. Depending on the type of tea you choose it can protect your teeth and heart, aid in digestion, and perhaps even prevent cancer.

The final, and perhaps most important, element of the Toddy is the hot water which gives the drink it’s most comforting factor, warmth! Plus the steam from the hot water carries all those lovely aromas straight through your nose for added relief of congestion.

Thirsty yet? Let’s cut straight to the recipes.

Our very favorite SweetShine Toddy is made with, you guessed it, Ginger! Ginger has it’s own health benefits, by the way! It aids in digestion, relieves nausea, reduces risk of cancer, improves heart health, reduces inflammation, and even helps to open your sinuses making it easier to breathe when you have a cold.

Here’s what you need for the Ginger Toddy:

1 oz whiskey

1 oz Ginger SweetShine

1 tsp honey

1 tea bag

hot water

lemon

Combine whiskey, Ginger SweetShine, honey, tea bag, and hot water, and allow the tea to steep.

Once you are satisfied with your tea, remove the bag and stir.

Add a lemon wheel and consume while hot.

Now let’s explore Dr. Todd’s hot brandy elixir. Remember, his consisted of brandy, canella (white cinnamon), sugar, and hot water. With just a couple quick substitutions we can easily make this our own. We will use a cinnamon stick instead of canella and Peach SweetShine instead of sugar. It’s really that simple!

For the Peach Toddy you need:

1 oz brandy

1 oz Peach SweetShine

1 cinnamon stick

hot water

Start with 1 oz Peach SweetShine.

Add 1 oz brandy.

Add a cinnamon stick.

Fill with steaming hot water and stir.

Allow the cinnamon to steep for a moment then stir again.

Consume while hot.

Next time you’re feeling under the weather, try drinking a Toddy! It won’t cure your cold, but it will provide some relief, warm you up, and help you rest while your body heals.

Orchard Rum Smash

But, WHY is the rum gone!? We’re guessing someone got their hands on this irresistible smash recipe made with perfectly ripe orchard fruits, Ginger SweetShine, and summer’s favorite spirit, RUM!

What you need:

Fresh peaches

Fresh cherries

Fresh lime

Fresh mint

Turbinado sugar (any sugar will work, but we like turbinado best)

Ginger SweetShine

Aged white rum

Club soda

In a short glass, combine:

1 tbsp. sugar

2 peach slices

2 lime wedges

2 fresh cherries

5 mint leaves

Add 3/4 oz Ginger SweetShine.

Muddle by pressing and twisting to release the juices and oils from the fruit.

At this point we recommend transferring the mixture into a shaker tin then straining it back into the glass.

Fill the glass with ice, then add 2 oz rum.

Stir.

Top with club soda and garnish with fresh fruit and mint.

Sweet Heat Margarita

Happy National Margarita Day! We have a fun ‘rita recipe for you to try on this joyous occasion. She’s nice and sweet with a sneaky bit of heat on the end.

Here’s what you need:

Cocktail:

2 oz tequila

1 oz Peach SweetShine

3/4 oz fresh lime juice

15 drops habanero bitters

pinch spice blend (recipe below, or substitute your own!)

lime wheel/wedge

Spice Blend:

2 tbsp. chili powder

1 tbsp. paprika

1/2 tbsp. cayenne pepper

1/4 tbsp. white pepper

1/4 tbsp. kosher salt

First, use a slice of fresh lime to rim your glass.

Then twist the rim in the spice blend to coat.

Beautiful! Now for the cocktail …

In a mixing glass, combine:

2 oz tequila

1 oz Peach SweetShine

Don’t forget to shake it up!

Add ice … a crucial ingredient for dilution of the tart lime juice!

Cover tightly, and shake vigorously until ice cold and frothy.

Strain over ice into your prepared glass, garnish with a lime wheel and an extra sprinkle of spice blend, if desired.

Peaches N Cremma Martini

Peaches and Cremma Lemma are a match made in heaven!

What you need:

1 oz Cremma Lemma SweetShine

1 oz vodka

1/2 fresh peach, sliced

Cut a peach in half.

Slice it up.

Add to mixing glass.

Pour 1 oz Cremma Lemma SweetShine.

Muddle. (Press and twist to release the juices of the peach).

Add ice, cover, and shake vigorously until ice cold.

Strain into a lovely chilled glass.

Garnish with a slice of peach, and there you have it! Peaches ‘N Cremma Martini with Cremma Lemma SweetShine.

Peach Bellini Cupcakes

According to T, these cupcakes are “un-bellini-ble”, and we think you’ll agree! This is a 3-part recipe, so we’re breaking it down a little differently this week.

For the champagne cupcakes:

Preheat oven to 350.

1 2/3 c. flour

1 c. sugar

1/4 tsp. baking soda

1 tsp. baking powder

Whisk to combine.

In a separate bowl:

3 egg whites

1 tsp. vanilla extract

1/2 c. sour cream

1/2 c. + 2 Tbsp. champagne

Beat on medium speed until combined.

Gradually add flour mixture to egg mixture while beating at medium-low speed. Occasionally scrape down sides of bowl to incorporate.

Line cupcake pan with wrappers and fill each one about 2/3 with prepared batter.

Bake 18-20 min, until toothpick inserted in the center comes out clean. Allow to cool 2 more minutes in pan.

Move to wire cooling rack to cool completely.

For the peach filling:

1 1/2 c. ripe peaches, peeled and diced

1/4 c. brown sugar

1/2 tsp. lemon juice

1/4 Tbsp. corn starch

1/4 Tbsp. Peach SweetShine

Bring 3/4 cup peaches, brown sugar, and lemon juice to a boil then simmer 10 minutes, stirring occasionally.

Mash peaches.

Add remaining peaches and simmer 5 more minutes.

Combine corn starch and Peach SweetShine, stirring until smooth.

Add to peach mixture, and stir. Simmer until thick.

Remove from heat and chill in refrigerator.

For the peach buttercream frosting:

1 c. unsalted butter, room temp

2 1/2 c. confectioner’s sugar

4 Tbsp. Peach SweetShine

Beat butter on medium-high speed for 5 minutes, occasionally scraping sides of bowl to incorporate.

Switch to medium-low speed and gradually add confectioner’s sugar.

Add Peach SweetShine and beat on medium-high speed until all ingredients are combined.

Assembly:

Use something round to create a hole in the cupcakes.

Fill a piping bag or ziplock bag with peach filling.

Kringle Punch

Every year my family makes this incredibly delicious cranberry punch. This year I decided to make it a little more jolly … by adding booze of course! I may even whip up a batch for New Year’s.

Here’s what you need:

1 c. Peach SweetShine

1 c. Ginger SweetShine

4 c. pineapple juice

4 c. cranberry juice cocktail

2 (750 ml.) bottles champagne

orange sorbet for serving

In a large punch bowl or pitcher, pour 4 c. pineapple juice.

Add 4 c. cranberry juice cocktail.

Add 1 c. Ginger SweetShine.

Add 1 c. Peach SweetShine. Stir.

Now pop the top,

Dragon Lady: “Quick, What is a Conjugal Seizure? I need it now.” Me: “What are you talking about?” Dragon Lady: “A cocktail recipe.”

Me: madly Googling to find what she is talking about with no results.

Me: “I can’t find it.” Dragon Lady: “I know–Make it up!”

Phone rings, the Dragon Lady is calling…ugh… Me: “Who is your audience?”

Dragon Lady: “middle aged guy who doesn’t drink, make it good! Sweet and sassy, and one that will sneak up on ya.” Me: “Ok, Bye” Hang Up!

Me: mind going crazy, need a cocktail that packs a punch but doesn’t taste like it does…

Text Message…Me:

  • A Conjugal Seizure
    • 2 parts cognac
    • 1 part Peach SweetShine®
    • 1 part Raspberry Lemon SweetShine®
    • squeeze of an orange wedge
    • toss it in the glass and garnish with a cherry
    • splash with club soda if he’s a wuss

    Dragon Lady: “Ok, wow…”
